Souvlaki inspired halloumi is a fantastic vegetarian option using the wonderful flavour combinations of garlic and herbs, combined with lemon for a zesty kick!
This dish was created as a vegetarian option to the Souvlaki Inspired Chicken recipe. It uses the same delicious marinade but there is no need to prepare in advance. In addition, the cooking method is slightly different but the result is just as tasty.
Souvlaki is a popular fast food dish in Greece. It is deliciously marinated meat that is grilled on a skewer and served with pitta and chips. However, I have adapted this concept for a vegetarian alternative using halloumi cheese and baby potatoes instead.
The winning flavour combination of garlic and herbs, combined with the zesty lemon, work really well together in this dish. It is these wonderful flavours that take us straight back to the sunshine and wonderful holidays we enjoyed there!
I also suggest serving this with a delicious salad. Why not try the Roasted Aubergine, Red Peppers and Bean Salad and maybe omit the feta cheese.
What you will need for the Souvlaki inspired halloumi cheese:
- Halloumi cheese
- A semi-hard cheese made from the milk of goats, sheep, or cows.
- Has a higher melting point so it can be cooked without losing its shape.
- Baby potatoes
- A great source of fibre and even more so because there is no need to peel them!
- An absolute seasoning winner, adds a great kick to the dish and is full of vitamin c
And for the marinade:
- Olive oil
- White wine vinegar
- Dried oregano, thyme and rosemary
- Garlic granules
