– 150 g mushrooms, sliced – 1 tsp miso paste – 1 tsp Tamari or soy sauce

Step 1 – Prepare your mushrooms and in a non-stick frying pan heat a little extra virgin olive oil on a medium heat and add the mushrooms

– Add your miso paste and soy sauce. Stir them together and then gently fold the mushrooms in the sauce making sure they all get coated
Step 3 – Leave the mushrooms to bubble away for another 3-4 minutes to allow all of the water and sauce to reduce.

Top Tip –try not to interfere with the mushrooms when they are cooking (i.e. lots of stirring) as this encourages more water to come out of them.
