  • 2 2 Hearts of romaine lettuce, chopped (approx 430g)

  • 400 g 3 cups cucumber, chopped

  • 180 g 1 1/5 cups cherry tomatoes, chopped

  • 50 g 1/3 cup red onion, chopped

  • 400 g 14 oz tin of chickpeas (240g drained)

  • 60 g 2 1/8 oz green olives

  • 60 g 2 1/8 oz black olives

  • 150 g 5 2/7 oz jarred antipasti

  • 60 g 2 1/8 oz shaved parmesan cheese

  • 125 g 4 2/5 oz mozzarella ball

  • Optional Dressing
  • 20 g 2 tbsp antipasti oil

  • 10 g 1 tbsp balsamic vinegar

Directions

  • Chop the romaine lettuce, cucumber, cherry tomatoes and red onion into bite-sized pieces. Add them all to a large mixing bowl.
