You only need a few simple ingredients for this basic crockpot shredded chicken recipe.
Ingredients (serves 6–8 portions):
- 4 large skinless and boneless chicken breasts (around 1kg)
- 200ml chicken stock or water (use stock for richer flavour)
- 1 tsp apple cider vinegar/lemon juice (helps keep it soft)
Notes:
- I prefer using chicken broth for added depth, but plain water works too.
- You can use frozen chicken breasts, just allow a longer cooking time.
- This is a lean, low-fat, high-protein base recipe that can be flavoured later for different meals.

The secret is a little acid and moisture. Adding apple cider vinegar or lemon juice helps keep the chicken soft as it cooks, and stirring a few spoonfuls of the cooking liquid back through the shredded meat locks in juiciness. Cooking it slowly on low heat rather than high also helps it stay tender.
Absolutely. Chicken thighs are a great alternative and turn out even more tender. They add a little extra flavour and healthy fats while still keeping the recipe diabetes-friendly and protein-rich.
Reheat it gently in a pan or microwave with a splash of stock or water. This keeps the chicken moist and prevents it from drying out.
