There are weeks when my slow cooker truly feels like my sous-chef. When life feels full, or routines change, especially while managing blood sugars, having something healthy and protein-packed ready in the fridge makes a real difference.

I started making this slow cooker shredded chicken to move away from buying processed meat. It quickly became one of my meal prep staples, helping me build lots of balanced meals throughout the week; from quick sandwiches and wraps, adding to soups and making quick and easy dinners.

You only need a few simple ingredients for this basic crockpot shredded chicken recipe.

Ingredients (serves 6–8 portions):

  • 4 large skinless and boneless chicken breasts (around 1kg)
  • 200ml chicken stock or water (use stock for richer flavour)
  • 1 tsp apple cider vinegar/lemon juice (helps keep it soft)

Notes:

  • I prefer using chicken broth for added depth, but plain water works too.
  • You can use frozen chicken breasts, just allow a longer cooking time.
  • This is a lean, low-fat, high-protein base recipe that can be flavoured later for different meals.

How to Make Shredded Chicken in a Slow Cooker

1. Add ingredients: Place the chicken breasts in your slow cooker and pour over the apple cider vinegar or lemon juice and stock. Season lightly.

2. Cook: Cover and cook on low for 5–6 hours or high for 3 hours, until the chicken is tender and easy to shred.

3. Shred: Remove the chicken breasts and shred them with two forks while still warm.

4. Return to moisture: Add a few spoonfuls of the cooking liquid back into the shredded chicken to keep it juicy.
