After our daughter’s 2020 diagnosis with type 1 diabetes, I began to explore lower-carb ingredients to help tackle frustrating high blood glucose days. Witnessing her struggle with hunger and feeling like she can’t eat as it will only make high blood sugars even higher, fueled my quest further. Discovering almond flour as a carb-friendly keto-baking alternative offered a welcomed solution in restoring some food freedom for her.
