After our daughter’s 2020 diagnosis with type 1 diabetes, I began to explore lower-carb ingredients to help tackle frustrating high blood glucose days. Discovering almond flour as a carb-friendly keto-baking alternative offered a welcomed solution in restoring some food freedom for her.
